Today’s Food Friday is a great meal for the whole family! Using coconut milk in place of a dairy product is a great way to incorporate the creamy taste without being overly inflammatory to the body. For the gravy I recommend starting with making a roux- equal parts coconut oil/organic butter and arrowroot flour (I used 2 TBSP of butter and 2 TBSP of arrowroot flour) and then adding the coconut milk and beef broth from there. I used white potatoes but sweet potatoes would be a great alternative as well! The key to making a sauce is continually taste testing and adding seasoning where it is needed.
