Happy Food Friday everyone! Today we are sharing another great recipe from the US Enzymes recipe book! Grilled Lemon-Pepper Zucchini is a great side dish or main meal. Since I don’t have a grill at home (yet), I made this on the stovetop in my cast iron pan with a lid. I also chose to switch out the EVOO for coconut oil as I prefer that taste and it’s a healthier oil to use. Overall, I thought this recipe went very well and had great flavor!
