Rosemary-Garlic Roast Chicken with Root Vegetables

Next recipe on the list- Rosemary-Garlic Roasted Chicken with Root Vegetables! This recipe is great for family dinner. I always recommend using fresh herbs when cooking rather than dried.  By stuffing the chicken cavity with onion and rosemary, it gives the chicken a bit of extra flavor. My few recommendations when trying this recipe at home is to make sure you have enough chicken broth in the bottom of the pan and to frequently check on the chicken when it is roasting. I checked on it 50 minutes after flipping the chicken over (the recipe recommends an hour), and some of the veggies were burnt ☹ . With enough moisture, the veggies will be roasted to perfection. If you really enjoy veggies, I would suggest doubling or tripling the number of vegetables. This is a new favorite for me!
